Playing to get an error from the opponent is the key answer. This is often the case in poker. You don't simply bet as much as you can. You size your bets in the best possible way to get the job done you want to get done. An opponent might obviously drop a game where you pot it but if you only half pot they might take and your equity is actually higher in that scenario. There are many other scenarios for varying your bet size that would apply in this type of backgammon also but I don't think examples are necessary.
