I didn't describe it as weird: rather, as slightly unnatural.
A round robin where the winner of the first match is always required to play in the second one will, half the time, take no longer than your adopted system. The main difference then is that the winner will always have beaten the two remaining participants and fully earned their title, rather than beaten only one, and being then defined as the champion. (If he loses he's defined as third.)
Stating that the 3 players are expected to play 2 or more hours longer is a misleading statement. On average it would take only slightly longer; they should be prepared to play longer, but 2 or more hours would be unlikely. But I confess a lack of knowledge of the nature of US events. In the UK it is much less common for any side events to have a potential clash with the conclusion of the main tournament, so the USBGF system for 3 way finishes makes more sense.
