Here is one way I draw the line. In a match yesterday, my opponent won the opening roll, but I got mixed up and thought I did, so I quickly moved the 6-1 and picked up my die and then, so did he. Then we both realized the error mistake. The rules say the play stands.

The rules do not say the play stands.

ILLEGAL PLAYS. A player may condone his opponent’s illegal play by rolling his dice or turning the cube.

As long as he hasn't rolled his dice for the next move, he can undo your illegal play and make his legal play. He hasn't condoned your illegal play yet.

Granted the first move is a bit different as both players are picking up a die (non-clocked), but the point remains the same. If he rolled his dice after you moved 61, then it would be too late.
