Here are the numbers (probability that the stronger player wins)

    100 elo difference
  • 11 point match: 59.4%
  • 15 point match: 61.0%
  • 2 out of 3 5pt: 59.5%
  • 2 out of 3 7pt: 61.2%
  • 3 out of 5 5pt: 61.9%
  • 3 out of 5 7pt: 64.0%
    200 elo difference
  • 11 point match: 68.2%
  • 15 point match: 70.9%
  • 2 out of 3 5pt: 68.5%
  • 2 out of 3 7pt: 71.5%
  • 3 out of 5 5pt: 72.6%
  • 3 out of 5 7pt: 76.1%

As far a length, typicaly a N point match average N games. Best of 3 will have 2 or 3 games, and in average 2.5

So Best of 3, 5 point match will be 12.5 games.

I dont think that system gains much, except it avoids that a very high cube decides the whole match on one game.
