I like the non consulting until the cube is turned. I feel it does speed up the game and doesn't nitpick over every play. It also puts some of the responsibility on each and every player in the chouette. If you have full consulting from the beginning I could in theory take someone who barely knows how to play backgammon, put them in a chouette with me, and make them a winning player by telling them "just do what I always do/say". (this is still somewhat consistent with a regular chouette but even moreso if we can consult from the get go of every game)
While it pains me to watch the opening phase of the game butchered in chouettes I think it would annoy me just as much if I was in that chouette and had to give my seal of approval before every play in a full consulting chouette.
Ditto for the Jacoby Rule--it eliminates a strategic aspect of the game just for the sake of speed.
