Let's change the facts to get rid of all the other distractions and see if the fast roll ruling is so obvious.
White doubles normally. Black clearly says, "I take," picks up the cube, and places it on his side of the board. As he touches the clock, without having pressed it yet, White rolls 6-6. Black pulls back his hand and says, "Wait, that was a fast roll, it doesn't count."
You can make a case that this is a fast roll, because after all the clock never got pressed, but I don't think it's so obvious. Black can't claim that he was still thinking, or that the fast roll prejudiced him in any way, because his cube action is already complete and is binding. White should still wait for the clock to be pressed, but it still feels like Black is being given license to take a free shot.
Stick's original situation is confusing because most of us seem to agree that the cube was dropped, yet Stick tells us to assume it was a take for purposes of answering the fast-roll question. If we clear out all the confusion regarding the cube, however, I don't believe the fast-roll ruling is as clear as you say.
