Would spinning it in a fluid in which it floats and seeing if always settles on the same side face up work?
Yes, but the difficult part here is "...a fluid in which it floats..." Dice are denser that water, so you either have to go to a denser liquid compound (most liquids are actually less dense than water) or find a dissolvable substance (salt/sugar?) which increases the density of water enough. And whatever you use it mustn't chemically attack the material of the dice, nor be dangerous to humans.
I used to know what dice are made of. Pretty sure density is either 1.05 (which would be easier to test with your method) or 1.3 (tougher). I think it's the latter, since Larry Strommen and I discussed your idea years ago and never followed through. If it were 1.05 I'm pretty sure we would have prototyped it.
