Outliers - take out the best and worst scores - depending on the number of games in the session - whatever makes the most sense. So, 20 games, maybe the single best and single worst - 40 games, maybe 2? What would make statistical sense?

What you are proposing is a trimmed mean. While this is an excellent tool in many situations, in this situation I don't think it makes any sense at all.

The best players are the ones who give up the least amount of equity (at least according to my PR-oriented definition). Not counting a game where the player played like a donkey simply ignores the fact that he lost a bunch of equity. You don't get a "throwout" in backgammon, so why judge the quality of play by ignoring plays that count?
