Two players in general should not be playing such a match without a staff member present in case a dispute arises. That means playing without a clock risks keep that staff member on duty til the wee hours of the morning so no go.
On top of that most tournament rooms close at a certain hour so they need to get it done and get a move on. I also don't like the possible scenario where even when both of them agree to it the match takes a long time. They both end up staying up way too late, getting less sleep than they need, and then they both bitch about it the next day to whoever will listen.
And no one should second guess the TD.
Really? I mean...really? There's a reason there's a committee appeal available at most tournaments, to second guess the TD.
