Easiest way to cheat at backgammon

They were shuffling checkers around so fast that it looked like Three-card Monte.
I know what you mean about Three-card Monte. When I see that going on, I stop my opponent, and insist that he/she moves the checkers back to the starting position after each trial. I also insist that he/she moves the checkers using only one hand.
I know that moving checkers with one hand is part of most rule sets. I am not sure that resetting the board between trials is in the rules. Nevertheless, I would not be shy about requesting a tournament official to impose such a requirement if my opponent refused to do so otherwise.
The tradeoffs of touch-move have been dissussed on this site ad-nauseam. I continue to oppose touch-move. I don't want to touch off another debate on the issue, however, so if you want to know my reasons, you can search for the earlier threads.
I will say that is has been interesting to watch Mochy over that past year or so. In most of the matches I have seen him play on YouTube, he has been playing touch-move. If a change is ever made (which I don't see anytime soom), Mochy will be ready! I can't say the same thing for myself.
