One idea might be to run a cubeless Swiss tournament. You play, say, three games with each opponent. The total points you win or lose (including gammons and backgammons) are added to your tournament score. Because everyone plays the same number of (clocked) games and no games are shortened because of a cube drop, the length of time the players are occupied will tend to be about the same.

(You wouldn't be able to run a cubeful tournament this way because of the possibility of a single game with a high cube completely dominating your score.)
