A lot has been written about time management in chess. Not all of it carries over, but much of it does. I like the discussion in Krogius's book Psychology in Chess.
Trying to match your opponent's clock usage is generally a bad idea, for a long list of reasons. Your opponent's predilections may differ from your own. Focusing on your opponent's clock is usually a distraction. Your position may require more thought than your opponent's. Etc., etc., etc.
