Starting at 3 sounds maybe reasonable, but with an easier starting position. This helps in two ways: The game is shorter, and the child can win a good share of the games even if you play your best.

A possible position which comes to mind is 5 checkers on the 6 point each. From that you could gradually increase the difficulty. Put some checkers in your own outfield, later add even some contact (and introducing new rules about hitting), maybe starting with one checker on the opponents 7 points, in addition to 5 checkers on the own 6 points, or so.
