Yes, you do.

Don't I want to ratchet up the cube more in simple games, like races, and in highly-volatile games where a shot might win me a lot of gammons and a miss might just lose me the game?

More than what? If you mean more than would be technically correct, then I (and Stick and Casper probably) would say no, you don't.

Why do you think increased volatility helps the weaker player in the context of a money game session? There are some not entirely unreasonable assumptions under which increasing volatility might make a difference: For example, if the stakes are high enough, volatility might be a means to put the opponent under pressure, and that might work better for one player than the other. It does not generally benefit the weaker player.

Another example would be when winning the entire session gives you something extra (if only bragging rights). Then, similar to match play, volatility does benefit the underdog. But in the handicap set-up, it is not even clear that you are the underdog.
