I think this is because of the next roll cube action. You get to cube in on most of the next rolls after 7/5(3), leaving the least jokers for your opponent. Also, its thematic that you shouldn't leave any unnecessary shots for your opponent - this is 6 extra shots to leave immediately (16,26,25).

Thusly, if you make the 7/5(2) play, you will be playing on for a gammon, which carries its own future risks, whereas with 7/5(3), you are just cashing it out - assuming in both cases that opp doesn't do something magnificent in between.
