Those eval numbers are cubeless.

To get a better idea of what's going on, there is a somewhat hidden feature of XG that lets you compare the results after you make each play.

Highlight both plays-->right click-->Dice Distribution.

All the equities in the Dice Map are cubeful.

With your example, you can see that the major factor against Bar/21 7/5*(2) is that after the 6 shots from the bar followed by White fail, Blue has a very efficient double.
