I can tell you that the first rule of a gentleman is to keep his word. In fact the essence of being a gentleman is being someone whose word is gold and can be trusted.

There are different possible meanings for a handshake:

(1) To offer congratulations, for example, on a game well played.

(2) To consummate a deal.

You are right that if the purpose of the handshake had been to consummate a deal, then it would have been ungentlemanly to renege on that promise. But the rules of tournament backgammon don't allow players to deal on the outcome of a match, so the only allowable interpretation of a handshake is an offer of congratulations. No more than that.
