I love playing on a computer...but what about XG cheating???

I find that hard to believe. Are you saying you don't also like any of the following: i) no illegal plays or score disputes ii) no cocked or thrown on to floor dice ever iii) board sets up in an instant.

"Even if I could somehow fix XG to cheat for me, how could I do it if I always let my opponent choose to play top or bottom?"

Easy. you could know the sequence of dice rolls in advance. It would not be hard to fix that possibility though. The seed is somehow randomly and jointly agreed on and it could be verified afterwards that the dice were correct for that seed.
