What fee would be fair to have a regular moderator?

Depends on who the moderator is and how long the meetings will last. (among other possible things) I would suggest if you get the group organized and the group decides this is an option to vote on who the best candidates are for being a permanent moderator and then ask this person specifically. Inquire with all the candidates you'd be happy with and take the best deal.
