I'm far from an expert, but ideally you don't want to give up your solid defensive structure (both anchors) until you have a reliably solid offense structure in place to contain. 7/2* actually weakens your offense (since you have few checkers to work with and really want to make the 3 or 7), so it's probably wrong to weaken your defense at the same time. If 7/2* is correct, I'm pretty sure 9/3 (keeping both anchors) would be the other half of it.
