Can you roll your dice when the opponent is away?

I understand what you mean. I would say in general that if a crowd is watching and the match is streamed then IMHO a player can roll the dice if his opp is not watching. In other circumstances, it might be better behaviour to pause the clock, although the rules don't allow that.
