Every chouette has its own rules and mores. But even ones that are long established often have disagreements. Over 30 years ago Jake Jacobs and I decided that we should have written rules that cover as much as possible, so that we don't have arguments or so that when they occur they are settled quickly.
Our rules have been revised from time to time over the years, but the basics are the same. As for this particular situation, if someone says "double" or "I cube" before the roll, the roll does not count and the double stands.
If someone says, "wait" or "no dice" or anything else, the roll counts.
I know in LA the way to stop the dice is to say "no dice" before the roll. Then the roll doesn't count and the player can think about doubling.
Again, everyone has different rules. Whatever yours are, I recommend you commit them to writing. If you, or anyone would like a copy of the Chicago Chouette rules, which do cover most every situation, you can email me and I will send it to you.
