Ugh! The advantage of 8/7 is that it keeps a five-point board, but of course it leaves two blots. Among the board-breaking rolls, the principle I usually follow is to break a high point if we think we might be forced to play another awkward roll in our board, and to break a low point otherwise. That principle would suggest 4/3 here, which also has the benefit (over 5/4 or 6/5) of making White's rolls of 41 and 31 both bad.
The double shot/double blot looks a bit much with White having a four-point board, so I would try 4/3.
