It is very difficult to give advice of a general nature, but if I understand that a surprising play is a blotty play, and combining this with your fear of a gammon from the double hit, one advice could be to look at the strength of your opponents board. Against a one point board you can take many risks, and in general, unless you can build an asset (point or anchor), you will hit loose on the good points (7,5,4, to a lesser extent 3). If you can make an asset is becomes a more difficult decision.

Perhaps as a more general advice - do you know Magriel's bold vs safe criteria? These could be good to review.
