MCV is Most Common Variation. Project what is most likely to happen on your next roll and then his next roll, and that will give you insights on your checker play and cube decisions. It also helps you identify your best game plan so that your checker play can support it, and/or help you identify your opponent's best game plan, so you can thwart it.
You don't need to project too far ahead in backgammon to get a good feel for what you should do...in fact, trying to predict too many rolls forward can be counter-productive given all the possible rolls and combinations of roll that are possible.
