The "schtick" that Danny was referring to was not at all a reference to Stick Rice, but rather a Yiddish term which basically means something like: "goofing around" or making comments to irritate or throw your opponent off.
What Danny was saying is that many good players cry about their dice or are poor sports if they lose or make comments during the match to suggest that they are superior to their opponent etc., and Nack is always a perfect gentleman (while at the same time he is doing everything he can to slaughter his opponents).
I think Nack subscribes to the philosophy stated so well by Winston Churchill:
"When you have to kill a man, it costs nothing to be polite."
