Question about time controls

At backgammon tournaments in Croatia clocks are not mandatory at this moment but we will start to implement them slowly. At 1st Dubrovnik Open 15-16th of May (backgammon-dubrovnik.com), clocks will be used in semifinals of main and both finals (main and consolation).

But what is most important for us in this moment, which time control we should use for matches which are not clocked from the beginning but tournament director decide to clocked them, at some score, bcuz such matches slow down whole swiss round and all other players should wait them to finished?

We will use Bronstein method, of course with 2.5min/15sec for start.

How we can calculate how many minutes we should give for both players in the middle of the match or later, according score, in such circumstances?

Of course their buffer will be 15sec or 12sec.
