The fastest recorded racquetball serve is 191 mph by Egan Inoue. This occurred back in the early 90s while I was still playing competitvely and I remembered the number. I had thought that Cliff Swain or Sudsy Monchik had since equaled this. References are few, but here's one I found:

In my experience, rallies in racquetball are much shorter lived than in squash, but more intense, with greater distances covered both due to the larger court, higher speeds and shorter racquets.
As for what I described on the fast serves, no, it is not deformation. I have seen the effect in the court with my own eyes. It is literally very much like what happens if a slower hit ball hits a wet spot on the court where the ball does not grab the floor and instantly rebound but rather it appears to slide and take off - except it does so on a dry floor.
