Regarding U and V, Tim is correct. For 31P-11N-21, you ranked the plays E, V, U, S (meaning Each 24/22 6/5, Variant-up 24/23 24/22, Up 24/21, and Split 24/23 13/11).
As luck would have it, those very U (24/21) and V (24/23 24/22) plays are diagrammed in #19a and #19b here. The diagrams sets for #20 and #21 further clarify.
I quote from the end of that segment:
"Here is a reliable way to determine whether to use U or V: If there is only one possible up play with a roll, use U. If there are two possible up plays with the roll, the play that moves the leading checker closest to home is nactated U, and the other play is V."
