Interpreting Cubeless #'s

A few days ago, after seeing results of opening 51 rollout, and the discusion of gammon rates that followed, I asked myself a question: how do we actually know if the gammon rate after spliting play is higher? Let me show you what I mean:

Cubeless winning percentage is 78.5 , but cubefull is 75, or 100 if black drops. This position is simple of course, and does not require too much effort to analyze. But how can I make sense of an opening rollout? Sure, if I played position arising after opening 51 to the end I would win more gammons after spliting -- acording to the rollout-- , but half of the time game will be over before that. What do you think?
