Looking for a server...

I'm looking for a server which:

(1) Does turn-based play. DailyGammon doesn't work for what I want, because of the computer guessing. Strictly one move at a time.

(2) Does live play (like GG, FIBS, etc.) but with a clock that's customizable, say with reserve time, delay, just like in real life.

(1) looks easier to find than (2).
