A similar thing happened to me online. Holding a 4-cube and losing the race badly, I (on roll) had all 15 men to my home board and all points covered, opponent had 4 men left on the ace. I unthinkingly pressed "resign" and opponent equally unthinkingly pressed "accept", and only when the next game started at -9 -5 rather than -9 -9 did we realise my client had generously resigned a gammon for me. In real life it probably wouldn't have happened, of course.
My opponent offered to resign a few points to put us back equal, but I (after a couple of minutes to compose myself) took the view that one should stand by ones mistakes and played on from -9 -5. And went down -9 0. In any case. the tournament we were in requires match files to be sent, so any attempt to "rectify" the situation would involve tampering with them. The alternative - allowing what are effectively undos - is imho a sure road to madness...
