Streaming the match as the extreme gammon board isn't hard to do. Also, putting the analysis in the corner wouldn't be difficult either. But here are some things to consider.

When you are streaming a live feed you don't need any extra people, the streaming can be done by somebody who can also play the tournament. You also run into an issue of the time involved for the person to sit and enter the match as the players are playing, which takes longer then if they can do it at 2x speed, and the compensation for their time.

When analysis is being shown as the players are playing it can create an unfair advantage in the match. The person recording must be extremely mindful of the information that they posses and the effects that it can have on the players. If, for example, Stick and Falafel are playing and during a break they glace over and notice that stick is playing a 6.3 vs fal's 2.3, the mindset of Stick is going to change and he is going to start thinking about how bad he played and how lucky he got instead of how he can play well in the rest of the match.
