In my experience the ones who killed the tournament flow were (i) the players so weak they would count out moves one pip at a time (ii) the players who seemed to turn it into a social event mid-round rather than actually focussing on the game, particularly with smoking and drinking breaks, and (iii) the few who enjoyed playing really complicated games, and deep backgames over and over again, whether called for or not. The worst culprits being those scraping out a match to DMP entirely in single games, not doubling until gin.
I think one gets much faster once the mechanics of the game become second nature, you get comfortable doubling oppos in, rather than out, and playing with high cubes; then slower again as you begin to appreciate more of the subtleties. I'm just surprised how many novices I come across at tourneys!
