I believe it's still possible in backgammon for John Doe to coach Richard Roe even if Richard Roe is stronger than John Doe OTB. John Doe still needs to be strong, of course, but for example John Doe can do enormous amounts of analysis with the help of bots and organize and distill the information if that is John's full-time job. Richard could do this himself but he will improve faster if he offloads much of that "routine" work to John and focuses his time studying the fruits of John's analysis.

Another thing that a sufficiently skilled John can do is to observe Richard during live matches, noting any potential weaknesses in time management, psychological toughness, etc. These are difficult for Richard to observe himself. John can also study Richard's opponents, analyzing their games and their psychological profiles.
