The biggest reason is that in the small confines of a backgammon board, cubes would not roll and/or bounce as randomly. If you look at a Craps table, they are what like 8' long by 4'wide and maybe 3' deep? They are also covered in diamond point foam which helps the dice tumble and you MUST hit the opposite wall for it to be considered a legal throw.

In BG, the rounded corners help the dice to spin and tumble better than square cut corners would.
