Square dice can be cut a lot easier (and cheaper) than beveled dice. For square dice, you extrude a rectangle of plastic, and cut dice and polish to the correct tolerances. For the beveled, each die needs to be spun on a lathe and cut to the right tolerances after the initial forming process.
If the cost added is even only a couple cents per die, consider how many dice Vegas uses and you can figure out how much money they save by going with the square cut dice.
If the square dice were inherently less "fair" then the rounded dice, the cost may not matter if they stood to lose millions of dollars in bets, but since the "fairness" of the two dice are so similar, they go with the cheaper (and faster to settle) dice.
