All of these are practical doubles in a chouette since some might drop and some might take.
1. Blue has a checker on the 24pt that is a bit tough to escape, and his checkers on the 2pt and 3pt are a bit out of play. Blue also has a 5pt gap. I think this gives White a take. D/T.
2. This one looks scarier for White. Blue does have three dead checkers and White could cause some problems for Blue if she anchors, but White's gammon danger is significant and I'd let this one go. D/P.
3. Suppose that White escapes a checker and Blue closes out the remaining White checker. With seven checkers off, White should still be able to take. That would suggest that this is still a take for White now. However, if White rolls 21 31 41 or 51 before rolling 11 or 61, then she's at risk of getting both checkers closed out. Still, I think White can take. Whether Blue technically has a double now I'm not sure, but as I said, in practice this is a double since White might drop.
