It shouldn't be too hard to see that there are gammons to be had (of course, whether the tradeoff is worth it is a more subtle matter). If you're slightly lucky, you'll be off in two rolls, and if your opponent is slightly unlucky, she won't be off in two rolls. So while you're not a favorite to win a gammon, it's not that unlikely an outcome.
