I don't think there is a lot of fun magic here, just tedious work :)
When transcribing from UStream not following the stream live, I find it preferable to get hold of the video file and play it locally. This removes the nuisance of ads and allows you to use your favourite video player to control eg. the playback speed. Here is how to get the file for the first part of Serrero versus Dogan. You first click the link MC2012, first semi, part one to go to that recorded part and it starts playing. Place your mouse over the video area in the embedded player and left click and then hit the CTRL-button and S on your keyboard. Among the info dispayed there will be the following

Take the part of the URI before the question mark: http://ustream.vo.llnwd.net/pd8/0/1/23/23897/23897318/1_11369050_23897318.flv and enter it into the address bar of your browser or enter it appropriately into whatever download tool you like to use. Depending on your browser settings and choice you should now have the option of downloading the file to your computer.
Now you "just" watch the video while having fired up xg or gnu and input the rolls and moves as the video progresses. There will be times where you cannot read the dice and will have to infer the roll from the checker plays. If in some spot it is essential to know the roll and the dice are not visible, you can slow down the playback by a factor 10-20 which usually allows you to read off the dice immediately before they come to a rest. A video player which will allow you to dic is VLC
I can only describe how to use gnu, maybe someone else can give some tips on xg which, I understand, have a mode designed for transcribing. Startup gnu and hit CTRL and N to start a new match. In the appearing window check "Human vs. Human" and "Manual dice". To edit player names click the "Modify player settings..." button. Player 0 is the player on top, player 1 is the buttom player. It is nice to have at least one of the checkers's colours match the corresponding checkers's colour on the stream. Under the menu "Settings" you can select "Board appearance" to select a board design with colours you find suitable.
NEVER use the "Edit" button while transcribing and save regularly hitting CTRL and S. Under the "Settings" menu you can select "Options" and in the "Game" tab check "Play forced moves automatically" to have forced moves played automatically which is a help in some some situations.
