You ask which tennis match is more interesting: basically, a five setter or 100 points to 90?
I would find the latter more interesting, as I am most interested in who is the better player. Counting every point instead of bunching them in groups, and then groups of groups (points, games, sets) is a much more efficient way of getting the better player (on the day) to win. Fewer peaks of excitement, but a more valid outcome. BTW, I personally wouldn't necessarily advocate playing tennis matches to points, as playing games is very much part of the character of tennis, but would happily abolish sets, playing a match to x games, with a lead of two.
Although sport is entertainment, it is also competition, and is supposed to be set up so that the better side, on the day, wins. Hour for hour of play, backgammon needs more help than tennis in this respect.
You find 0-0 to 23 boring. That's a shame. Personally, I can find games and positions to be fascinating at any score, or for money.
A totally pedantic conclusion to this post, but nonetheless true: there is actually no such thing as an 8 cube in a 5 or 7 point match.
