It's still apples and oranges. You compare one format to another, assuming that they tighten up time-controls in just your own suggestion, to get to a comparable playing time...
Turn things around, and you would compare best of 3 to 5 with 2.5/15 to that of a single 25 point match with 2/12!
Furthermore, the risk of the best of x format, is that you never make it to the x'th match!
How incredible fun is it, if one player simply wins two 7-pointers - one of them maybe in a single game - and then, WC finals over...
They could go to your suggested time controls and play to 31 points instead of the current 25!

Regarding reading your post more careful - I will do so in the future. It doesn't change the fact, however, that in your first sentence you advocate for 5 or 7 pointers, but in the final sentences you suggest up to 11 pointers. I still say, there's a heck of a difference between a 5-pointer and an 11-pointer, so the arguments for each should be different.
Best of 5 to 5 would be ridiculous IMHO, for the reasons I've mentioned. Best of 3 to 11 could possibly work, even though I think around 15 points is where the match goes from "long" to "medium", in the sense of different cube and score decisions you can encounter and their distribution.
