Paul Weaver's polite words to a pigeon would likely be "you are a strong player".

Personally, my polite way of saying pigeon is "squabit". Because a squab is a young, newly hatched, or unfledged pigeon and because pigeons look like hobbits in that they characteristically have plump bodies and short legs.
