I'd just play 7/1 and concentrate on building the board. If you run off the anchor, the immediate tactical risk is limited, but you remain quite a lot behind in the race.

If nothing of importance happens to the race, my plan would be to slot the ace, cover the ace, and then run of the anchor with a single checker.
