Bob, I think Steen will shed more light on this, but as far as I've understood, it goes like this:
The main sponsor is Danske Spil (Danish Games), who is more or less the Danish Public Bookie, national bi-weekly lottery maker, etc.
They will make the Nordic Open an event to bet on in their program like any other sports event, so you can bet on not just the winner, but other things too (top-4, maybe other). They will set odds on expected strong players that have announced their arrival, and they will probably have a "other player" entry covering all those players not getting specific odds (thus representing Danske Spils guess on how strong the field will turn out to be).
I'm sure they will be correcting their odds as we go along, if/when they get better knowledge of the field. I don't know if they will provide new odds during the tournament, from day to day, but I suppose they would do so.
Now to stimulate things a bit, and to encourage players to sign up, I think they will make public the total sum put on each player, and reward the players generating the biggest revenue, with sponsored prices. I', not into the mechanics of this, only heard it from Steen verbally - but I'm sure he'll post the details here, to make sure players don't miss this opportunity for a little extra added :-)
So if you're full of skill and ego, you could decide to go, announce your arrival, and pick up the prize for generating most bets - since people will obviously put their money on you!
Danske Spil will have booth in the playing area, so you can always check out their latest offers, and place a bet or two.

Now someone asked about online qualifiers - Danske Spil is currently launching online BG as part of their portfolio, but only for Danes! And their current server doesn't support tournaments in it's first release. So they were not able to run online qualifiers this year, and I suppose out of respect for the sponsor, Steen did not approach their competitors to run such official qualifiers.
