Well... you can always try and fool the bookies. There are many ways. It is easier to do at special events that are not run often. However in the end, you will find that fooling the bookies is not the easiest thing in the world. How much money do you expect that a person could make from a bookie, just because he keeps his arrival secret? How much does this affect the real odds? It is possible that the bookie will estimate the "other player's" odd wrong enough so you can make some money, but then again you might estimate it wrong as well.

The bookie will make money for sure in a simple way. If someone turns up and places a large bet on the "other player" option, they will just not accept his bet. They will say to him, you can bet max xxx€. If at any point the total amount that everyone collectively has bet on the "other player " option is too high, the bookie will lower the odds for that option and in extreme cases it will lower the maximum amount that a player can bet. This process will ensure that people put more money at other options and that there is an even distribution of money according to the odds. If a bookie feels uncertain about the odds that the "other player" option should have, he will just give it low odds at the beginning. Then later, if no one bets on it, the bookie will raise the odds a bit.
