You have been given excellent explanations to this problem already, but I will add a thought that might be of help to you. When your opponent has a free drop and you get the opening roll, you want to make plays that are most likely to give your opponent a difficult decision, or one that could lead to volatility and big swings if he decides to take. So when you slot with a 2-1, he will have a pretty obvious drop unless he hits you or rolls 6-6 or a great roll. But when you split, he may end up taking a position that you can quickly convert to your advantage.
Another interesting roll at this score is an opening 6-4. If you play up and split and he hits you off of his bar point, then you double, he will have a take. However, you are now in a position to take a nice advantage if you come in and hit him back, which you will do 16/36 of the time. If you make other plays with the 6-4 he is more likely to have rolls that will give him a clear take with less volatility, or a clear drop.
When you give your opponent a clear take with little volatility, or a clear drop, you are making his life easy. Your goal is to make his life as difficult as possible. (Pretend that your opponent is one of your parents.)
