I think we can double out on a dance after any reasonable play. So, we want the best position possible after entering. 21-11, 21-16(2) creates extra shots at the outfield blot at the cost of more indirect shots from the bar. I don't think it's worth it. 21-16(3), 13-8 leaves only two shots from the bar and should be as good a builder / attacker as a blot on the 11. 21-16(3), 13-8.
