If you want to have two cameras with high resolution I would recommend i5 or higher. i3 may work but it may be "pushing". You may be able to start two videos, but when you stop one of them, the other freezes for some time until your laptop recovers from overload. This may or may not be a problem depending on what you are trying to do.
