5/off probably doesn't win more gammons since it surely loses more games. You have to win before you can win a gammon.

5/2 5/3 wins more games than 3/off 3/1 since white will never get a shot afterwards. Does it win enough more games that it also wins more gammons?

Six checkers off is not that much closer to finishing than five checkers off, and filling the gap on the deuce may save a roll, so I'll just make the DMP play.
